I. Introduction

Polylysine is a homomonoeric polymer polypeptide containing 25-30 lysine residues. This lysine polymer is formed by the connection of lysine residues through amide bonds between the α-carboxyl and ε-amino groups, hence it is called ε-polylysine. Studies have shown that ε-PL has stronger activity than α-PL. Its chemical properties include being a light yellow powder, highly hygroscopic, with a slightly bitter taste. The production method involves aerobic cultivation of Streptomyces albulus (an actinomycete), followed by filtration of the culture broth, adsorption using ion exchange resin, and then separation and purification.

II. Properties

It is a light yellow powder, highly hygroscopic, with a slightly bitter taste, and is a linear polymer of lysine. It is not affected by pH and is thermally stable (120°C, 20 minutes).

Used as a food additive, cosmetic additive, etc.
