L-Valine appears as white monoclinic crystals or crystalline powder. When recrystallized from an ethanol-water solution, it forms colorless plate-like or flaky crystals. It is odorless with a characteristic bitter taste. Melting point is approximately 315°C. The pH of a 5% aqueous solution is 5.5~7.0. It is stable to heat, light, and air. Easily soluble in water (8.85g/100ml, 25°C), almost insoluble in ethanol. Separation from leucine is difficult. It is an essential amino acid.
